Servings: 6 people
Ingredients
- 1 kg wheat flour
- 450 ml warm water or milk
- 100 g lard
- 100 g butter
- 4 teaspoons salt
- Baking powder
- 1 egg
Instructions
- In a large bowl, sift and mix the flour, salt, and 1 teaspoon of baking powder. Add the melted butter and lard, and mix with a dough hook attachment, gradually adding the warm water or milk until a smooth and homogeneous dough forms. Preheat the oven to 200°C (392°F) for at least 10 minutes.

- Divide the dough into 20 to 30 pieces, depending on the desired size of the dobladitas. Cover them with a clean kitchen towel and let them rest. Roll out each piece individually with a rolling pin, forming a circle, and then fold it into four parts to create a triangle.

- In a small bowl, beat the egg until smooth. Place the dobladitas on a lightly greased baking sheet, brush them with the beaten egg, and prick them with a fork. Bake in the preheated oven for 15 to 20 minutes or until lightly golden. Serve the dobladitas warm, either plain or accompanied by butter, ham, jam, or the classic option: with cheese.
Dobladitas without lard
If you prefer not to use lard, you can replace it with 100 g of butter or 150 ml of your preferred vegetable oil. Alternatively, omit the fat entirely, use only water, and increase the baking powder to 4 teaspoons.
Whole Wheat and Vegan Options
To make whole wheat dobladitas, substitute white flour with whole wheat flour. For a vegan version, replace the butter with vegan margarine or olive oil, omit the egg yolk, or use a mixture of water and oil for brushing.
Nutritional Porperties
Chilean dobladitas are a source of complex carbohydrates, providing sustained energy. If made with whole wheat flour, they also offer dietary fiber, which aids digestion. They contain healthy fats and B-complex vitamins, essential for metabolism and nervous system health, especially when using ingredients like olive oil or vegan margarine.
A Bread with Colonial Origins
Dobladitas are a 100% Chilean bread with a history dating back to the colonial era. They originated from the practice of using leftover empanada dough, which was already cut into circles, to create this unique and delicious bread.
