Peruvian Chaufa Rice Recipe

Ingredients
- 4 eggs
- 5 sausages
- 4 cups of rice
- 2 tablespoons of ginger (kion)
- 2 teaspoons of garlic
- 1 cup of green onion (cebolla china)
- 1 chicken breast
- ½ cup of bell pepper
- ½ cup of soy sauce
- ¼ cup of vegetable oil
- Salt
Instructions
- In a large bowl, crack the eggs and whisk with a fork. Pour into a pan with a drizzle of oil and cook to form an omelet. Set aside on a plate and cut into small cubes. Prepare white rice to your preference and set it aside separately.

- In a large pan, add a drizzle of oil and heat over medium heat. Sauté the seasoned and diced chicken breast until cooked through. Add the sliced sausages, ginger, and garlic, and cook for a few minutes.

- Add the rice and bell pepper to the pan. Mix with a wooden spoon and sauté. Incorporate the soy sauce and sauté again to combine everything. Add the diced omelet and green onion. Sauté one last time to heat through, then serve immediately.
