Valdiviano crudos are a must-try classic in the beautiful city of Valdivia, Chile. One of the most iconic places to enjoy this dish is the traditional Das Haus 1959 café.

How to Prepare Crudos?

Preparing Valdiviano crudos is an experience that combines the freshness of raw meat with a variety of tasty accompaniments, perfect for a good “once” (afternoon snack) paired with a dark beer and an apple kuchen.

Ingredients

  • 1 chopped onion
  • 2 dill pickles
  • 2 lemons, quartered
  • 1 chopped green chili
  • Old-fashioned mustard
  • Olive oil
  • Salt
  • Pepper

3. Sauce

  • 120 g homemade mayonnaise
  • 2 tablespoons natural yogurt
  • 2 tablespoons cream
  • 1 tablespoon cilantro
  • 1 tablespoon chives
  • Salt

Instructions

  1. Remove any excess fat from the meat with a sharp knife. Grind the meat in a food processor or blender until smooth and homogeneous. Refrigerate.
  2. In a medium bowl, combine the cream, homemade mayonnaise, natural yogurt, chopped cilantro, chives, a little olive oil, and salt to taste. Mix all ingredients until you get a homogeneous sauce. Set aside.
  3. Toast the slices of sandwich bread or place them in the oven at medium temperature for a couple of minutes, flipping them to get an even and slightly crispy toast.
  4. Spread the ground meat on each slice of toasted bread and arrange on a wide, shallow plate. Place the crudos on the table along with the accompaniments: chopped onion, dill pickles, green chili marinated in olive oil, and old-fashioned mustard, served in small individual bowls.
  5. Gently prick the surface of the meat with a fork and distribute the chopped onion on top. Squeeze lemon juice over the meat and add pickles, green chili, old-fashioned mustard, salt, and pepper to taste.

Crudos are a good source of high-quality protein, heme iron, and vitamin B12, essential for red blood cell formation and cellular energy. Additionally, accompaniments like lemon and onion provide vitamin C and antioxidant compounds, while yogurt and cream contribute calcium for bone health.
