The Venezuelan-style pineapple cake is a type of sponge cake topped with a layer of pineapple slices in a pineapple juice caramel.

Ingredients
1. Cake
- 450 g wheat flour
- 250 g margarine
- 200 ml pineapple juice
- 4 eggs
- 1 pineapple, sliced
- Baking powder
- Maraschino cherries
2. Caramel
- 600 g sugar
- 500 ml pineapple juice
- 3 tablespoons margarine
- 1 teaspoon lemon juice
Instructions
- In a large bowl, add the margarine at room temperature and beat until creamy. Gradually add the sugar and continue beating until dissolved. Incorporate the egg yolks and mix until everything is well combined into a homogeneous mixture.

- Gradually add the sifted flour mixed with 1 teaspoon of baking powder. Then, incorporate the pineapple juice and mix gently, without overmixing, just until combined. Finally, fold in the egg whites beaten to stiff peaks.

- In a medium pot, add three tablespoons of margarine and heat until melted. Add the sugar and pineapple juice, stirring gently until everything is combined and the mixture turns a golden color. Pour the caramel into the cake pan, covering the entire surface.

- Arrange a layer of drained pineapple slices over the caramel base. Optionally, add maraschino cherries in the center of each slice. Pour the cake batter into the pan, gently tapping to settle it. Bake in a preheated oven at 180°C (356°F) for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

- Remove from the oven and let it rest for 10 minutes before unmolding. Serve the pineapple cake in slices as a dessert or accompaniment, just like in the Caribbean, on a sunny afternoon paired with coconut water.
