How to Prepare Cabbage Stew?
The basic recipe for cabbage stew is always similar, although the meat can be replaced with sausages and/or chorizo in the preparation.
Original Don Fausto Stew Recipe

Ingredients
- 300 g beef rump
- 250 ml hot water
- 1 beef stock cube
- 1 medium cabbage
- 1 tablespoon parsley
- 1 chorizo (optional)
- ½ onion
- ½ teaspoon oregano
- ¼ teaspoon cumin
- Oil
- Salt
- Pepper
Instructions
- Cut the beef rump into small, elongated pieces. Wash the cabbage, remove the thick stems, and cut into strips. Dice the onion into small cubes. Set everything aside. In a large pot, add a drizzle of oil and heat over high heat. Add the onion and sauté, stirring until it becomes translucent.
- Add the chopped beef, diced chorizo (optional), oregano, and cumin. Stir everything together and cook over medium heat for a couple of minutes to infuse the flavors.
- Add the chopped parsley and cook for a few more minutes. Dissolve the beef stock cube in hot water, ensuring there are no lumps, and pour it into the pot. Season with salt and pepper to taste, and mix everything with a wooden spoon.
- Add the shredded cabbage, cover the pot, reduce the heat to low, and cook for about 30 minutes or until the meat and vegetables are tender. Turn off the heat and let it rest for a few minutes. Serve immediately, piping hot, either on its own or accompanied by rice, roasted potatoes, or french fries.
Origin of the Name “Don Fausto”
This cabbage and meat stew took its name from a comic strip adapted in Chile called “Amenidades del diario vivir,” where Don Fausto was the protagonist who enjoyed this dish at his favorite restaurant.
